Fresh & Local: Farm to Fork at Full Circle Farm

CHEF MARK SEGOVIA | MEANINGFUL MEALS
By Chef Mark Segovia

The moment I first walked onto Full Circle Farm and met Zoe and Jeff, I knew this was the kind of partnership I ' d been chasing my whole career. You feel the love they ' ve put into that land the second you step onto it: it ' s in the soil, the air, and most of all, the produce. There ' s nothing like the smell and taste of fruit and vegetables allowed to ripen the way nature intended, with none of the shortcuts.

As a chef, finding people this dedicated to doing things right is what keeps me excited about the work. The best dish never starts on a cutting board. It starts with where the ingredients came from and who grew them, and some of my proudest moments this year have come from building that relationship with Full Circle Farm.
Zoe Davis brings a scientist’ s precision to the fields. After years in advanced microbiology research, she and her husband, Jeff, founded Full Circle Farm right here in Gilroy. Through minimal tillage, cover crops, and generous mulching, they’ ve built a regenerative operation that works with nature instead of against it, cultivating the kind of rich, healthy soil that makes produce truly shine. They offers a seasonal CSA( Community Supported Agriculture) and year-round produce box pickups.
Together, we ' ve run farm tours and I ' ve brought their harvest straight into my kitchen, because there ' s no better way to show people what real food actually tastes like. Every recipe in this column uses produce grown right here at Full Circle Farm, proof that the best food isn ' t shipped
